Yellow Squash Noodles with Zucchini Pesto

Today is a perfect day to try a new delicious, healthy and special recipe. We come in with a super-helpful suggestion: Yellow squash noodles with zucchini pesto!

Veggie noodles are a fun way to get some extra nutrients and vitamins into your diet and it takes a minute to turn a yellow squash into noodles if you use the Kitchen Supreme Spiralizer.

This recipe is a delicious alternative for the classic tomato sauce or basil pesto. And let me tell you something else: this recipe is incredible because there are no more than 33 calories in a medium zucchini.

To prepare this zucchini pesto you need only a few classic ingredients, such as pine nuts and spinach. These ingredients transform the pesto sauce into a great source of minerals, magnesium, zinc, potassium, iron and calcium.

While you prepare the sauce you can spiralize the yellow squash to turn it into long and perfect noodles.

INGREDIENTS
1 medium zucchini
1 garlic clove
2 tablespoons of pine nuts
1 cup of chopped fresh basil
1handful young spinach
salt and pepper
2-3 tablespoons extra virgin olive oil

INSTRUCTIONS
Clean and peel the zucchini, grate and squeeze with your hands the excess of liquid. Put it into a blender together with the garlic, pine nuts, spinach, salt and pepper. Start the blender and mix the ingredients while you add the olive oil. If you prefer it to be creamier, add more oil.

Mix the zucchini pesto with the squash noodles or eat it as a salad or dressing sauce.

You can eat this zucchini sauce not only with yellow squash noodles but also with carrot noodles.

ZUCCHINI PASTA WITH AVOCADO MAYONNAISE

There are some nights when we want to eat something special, nutritious and tasty, but we don’t want to gain weight. The recipe below will satisfy your craving and not only because is delicious, but also because its ingredients are magical for your health.

Serves: 2 people

Ingredients:
2 large zucchini
1/2 orange, cherry, halved
Pine seeds
Baby spinach leaves
zest of one lemon
Avocado-Cucumber Puree
2 medium avocado
1 cucumber, peeled and sliced thick
a few large leaves of basil (optional)
Lemon juice made from 1 lemon
3-4 garlic cloves
1/4 teaspoon white pepper or black pepper to taste
salt to taste
Prepare your zucchini noodles with the Spiral Slicer.
For the puree, place all ingredients into a food processor/blender and process until creamy. Taste for flavor and add anything extra if you like. Toss zucchini pasta with avocado-cucumber mayonnaise and a handful of baby spinach leaves. Serve with tomatoes, pine seeds, lemon zest and fresh orange.

What you should know about zucchini
A big zucchini contains a large amount of magnesium (58 mg, The Linus Pauling Institute) and plays a significant role in the bone’s health.
In only 100 grams of zucchini there are 0.35 mg of vitamin B3, high levels of vitamin B9, 270 mg of potassium, iron, manganese, 30 mg phosphorus, zinc, 230 mg of provitamin A, 10 mg of vitamin C, 3.2 grams of dietary fibers, carotenoids (for visually impaired), anti-oxidants (reconstruction of nerve cells).
Zucchini is one of the best sources for protection against inflammation due to the presence of omega-3 fatty acids in seeds, as well as antioxidants (lutein, zeaxanthin and beta-carotene) and polysaccharides.

Also, if you want to lose weight you can’t go wrong with zucchini. Are very low in calories (about 15 calories / 100g) and contain 95% water. Zucchini bark is full of fiber and can help protect against colon cancer. It also prevents diseases caused by intestinal parasites.
