Green Tea and Zucchini Noodles with Honey-Ginger Sauce 

Many studies revealed that green tea has enormous health benefits for body and spirit, due to its high level of antioxidants and nutrients. Zucchini Noodles and Green Tea with Honey-Ginger Sauce

  • 8 oz. green tea soba noodles
    • sea salt
    • 3 medium zucchinis
    • 3TBS olive oil
    • 1TBS grated fresh ginger
    • 3 garlic cloves, peeled and grated
    • 2tips sesame oil
    • 2TBS Honey
    • 2Tbs soy sauce
    • juice from 1green lemon
    • 20-25 leaves fresh basil
    • 20-25 leaves fresh mint

Bring to a boil a large pot of salted water and cook the soba noodles according to the package directions. Drain and set aside.

In order to transform the zucchini into long noodles, I recommend you to use the Kitchen Supreme Spiralizer. It will help you create beautiful julienne spirals and your salad will look amazing.


Place the zoodels in a colander, salt liberally and let drain 15 minutes.

Heat the olive oil in a small pan over medium heat, add the grated ginger and grated garlic, and fry for 2 minutes, stirring constantly to prevent sticking. Remove from heat, add the sesame oil, honey, soy and green lemon juice and stir until you get a smooth sauce. Add the sauce to the soba noodles and toss to coat.

Julienne the basil and mint leaves by stacking the leaves, rolling into a cylinder and thinly slicing. Add the julienned herbs to the noodles and toss. Squeeze the drained zucchini noodles to remove any additional liquid, then add the zucchini noodles to the other ingredients. Toss to combine. You may need to run a fork through the noodles to separate the strands and better combine both noodle types. Serve at room temperature or chilled.

Acid or alkaline, what do you choose? 

Our blood ph is the star of the day. I will share with you some shocking information that will help you understand better some functions in our body.

You probably already know that after food is digested, absorbed and metabolized, it becomes basic (alkaline) or acidic when is released into the bloodstream.
But what is the pH?
If the food has a higher pH the more alkaline it is and full of oxygen. That means a healthy environment where inflammations, infections and bacteria have no place. On the other hand, the more food has a lower pH, the blood becomes too acidic and deprived of oxygen. That means a “good” environment for infection, pain, inflammation and parasites.
The pH values vary from 0 to 14, the index of 7.0 is considered neutral. All values above 7.0 indicate a greater degree of alkalinity, and values below 7.0 show a higher level of acidity.
The human body keeps the pH in general around 7.35 – 7.45, and the deviation from the indices announce the installation of diseases.

Your diet can make you sick.

Serves: 2 people

2 large zucchini
1/2 orange, cherry, halved
Pine seeds
Baby spinach leaves
zest of one lemon
Avocado-Cucumber Puree
2 medium avocado
1 cucumber, peeled and sliced thick
a few large leaves of basil (optional)
Lemon juice made from 1 lemon
3-4 garlic cloves
1/4 teaspoon white pepper or black pepper to taste
salt to taste
Prepare your zucchini noodles with the Spiral Slicer.
For the puree, place all ingredients into a food processor/blender and process until creamy. Taste for flavor and add anything extra if you like. Toss zucchini pasta with avocado-cucumber mayonnaise and a handful of baby spinach leaves. Serve with tomatoes, pine seeds, lemon zest and fresh orange.

What you should know about zucchini
A big zucchini contains a large amount of magnesium (58 mg, The Linus Pauling Institute) and plays a significant role in the bone’s health.
In only 100 grams of zucchini there are 0.35 mg of vitamin B3, high levels of vitamin B9, 270 mg of potassium, iron, manganese, 30 mg phosphorus, zinc, 230 mg of provitamin A, 10 mg of vitamin C, 3.2 grams of dietary fibers, carotenoids (for visually impaired), anti-oxidants (reconstruction of nerve cells).
Zucchini is one of the best sources for protection against inflammation due to the presence of omega-3 fatty acids in seeds, as well as antioxidants (lutein, zeaxanthin and beta-carotene) and polysaccharides.

Also, if you want to lose weight you can’t go wrong with zucchini. Are very low in calories (about 15 calories / 100g) and contain 95% water. Zucchini bark is full of fiber and can help protect against colon cancer. It also prevents diseases caused by intestinal parasites.

By cooking, a lot of live food enzymes dies because they do not survive at high temperatures.

I am right when I say that after eating cooked food you feel tired and sleepy? It is because that food is devoid of enzymes, minerals and nutrients. The body will take from teeth, bones, blood and other organs nutrients needed for digestion, which leads to deficiencies. It will be hard for you to concentrate because all the blood goes down into the stomach to deal with digestion.

What should you do? 
Eat small portions of cooked food in addition to a huge salad.

If you like sweets, don’t worry! You can prepare in a couple of minutes raw sweets made from almonds, cashew, honey, cacao beans, cinnamon, macadamia nuts, coconut butter and other healthy ingredients.

Replace regular pasta with zucchini, squash or carrot pasta. Is better for your health to avoid carbohydrates from spaghetti and replace them with vegetable noodles and julienne spirals.
