Many studies revealed that green tea has enormous health benefits for body and spirit, due to its high level of antioxidants and nutrients. It is well known that green tea can improve brain function, reduces the risk of cancer and helps with weight loss. Also, green tea helps to lower “bad” LDL cholesterol.
Besides sipping a cup of green tea every day, we can build our antioxidant protection also with this delicious vegetarian salad.
Zucchini Noodles and Green Tea with Honey-Ginger Sauce
- 8 oz. green tea soba noodles
• sea salt
• 3 medium zucchinis
• 3TBS olive oil
• 1TBS grated fresh ginger
• 3 garlic cloves, peeled and grated
• 2tips sesame oil
• 2TBS Honey
• 2Tbs soy sauce
• juice from 1green lemon
• 20-25 leaves fresh basil
• 20-25 leaves fresh mint
Bring to a boil a large pot of salted water and cook the soba noodles according to the package directions. Drain and set aside.
Place the zoodels in a colander, salt liberally and let drain 15 minutes.
Heat the olive oil in a small pan over medium heat, add the grated ginger and grated garlic, and fry for 2 minutes, stirring constantly to prevent sticking. Remove from heat, add the sesame oil, honey, soy and green lemon juice and stir until you get a smooth sauce. Add the sauce to the soba noodles and toss to coat.
Julienne the basil and mint leaves by stacking the leaves, rolling into a cylinder and thinly slicing. Add the julienned herbs to the noodles and toss. Squeeze the drained zucchini noodles to remove any additional liquid, then add the zucchini noodles to the other ingredients. Toss to combine. You may need to run a fork through the noodles to separate the strands and better combine both noodle types. Serve at room temperature or chilled.
